actually the focus should be on riding. i think it is doable if you bring a calf up, and given that the bull is of a beef breed (not diary, beefs are slower and DEFINITLY not Jersey) i think that the animal will be docile enough. ofcourse, some breeds are a handful even as oxen, but if i’d keep a bull i’d pick a docile beef breed.
actually i think bulls can be docile if socialized from an early age. ofcourse the animal will be aggressive if it has hormones and didn’t learn pecking order in life. the same thing applies to dogs and people. dogs, for example, will either shy or be aggressive if not socialized as puppies.
one thing though, i think bulls shouldn’t be worked together if they haven’t grown up together, or they would fight.
let me give some examples for the use of bulls:

this is in korea. unfortunatelly the picture is not big but you can see the testicals. the bull is intact.

Bulls are worked in parts of the world. We trained 2,3, and 4 yr. old bulls to work and plow in northern Uganda. Small zebu type, not castrated, most had know severe handling. They all tamed down and learned to work in two weeks’ time.
