How can you beet the taste of fresh garden vegatables?
We have canned dilly beans, peach chutney, peach jam, spaghetti sauce, pickles and pickled beets.
We have vacumed packed and put in the freezer, squash, zuchini, and corn from the garden as well.
I love summer and only regret that the weather was not the best for some gardners this year, depending on where you were. Hope you are all enjoying your bounty.

August 31, 2009 at 11:35 pm #54023jen judkinsParticipantLooks good, Ed. I’ve been doing alot of canning too. Thought my tomatoes were gonna make it, but they succumbed to the blight just this week…terrible loss as I love to make salsa! Now just waiting for the corn….hopefully no frost this week.
September 11, 2009 at 1:50 am #54025AnonymousInactiveI overdid the tomatoes… 8 plants survived out of 12… the tomatoe cages broke, so I had to tie the tomatoe plants to the fence…. which also didn’t hold for long. I’m going to get busy on canning salsa and spagetti sauce. I also got a lot of potatoes, cucumber, squash, sweet corn, onions, carrots and muskmellon. Also harvested but not so bountiful: 1 watermellon, 1 pumpkin and 1 eggplant. 🙂 There’s something good an honest about growing your own food. Have fun with canning- I know I’ll be busy doing the same! 🙂
